Chicken and broccoli

I remember this dish fondly growing up, and my mum has always raved about how quick and easy it is to make. I decided to give it a crack this week and can safely say it really is a quick, one dish meal that you can make with ingredients you would generally have on hand (bar the barbecue chicken of course!)


  • 1 barbecue chicken
  • 1 broccoli
  • 1 tin Campbells condensed chicken soup
  • 1/2 cup grated tasty cheese
  • 1/2 cup mayonnaise
  • 1 cup milk
  • 1 teaspoon Keens curry powder
  • parmesan cheese and paprika to sprinkle on top

Prep time: 20 minutes
Cook time: 40 minutes
Servings: 4


Preheat oven to 180 degrees.

Boil / steam broccoli until just tender – I take mine off the boil as soon as the broccoli floats to the top of the pan.


Place barbecue chicken and par cooked broccoli into a roasting dish – a bit tricky to make this look pretty!


Sprinkle some parmesan cheese over the top.


Combine the soup, milk, cheese, mayonnaise and curry powder and heat until warmed through and the cheese is melted, but do not bring to the boil.


Pour warmed mixture over the chicken and broccoli and sprinkle with remaining parmesan cheese and paprika. You can make ahead and pop back in the fridge at this stage until you’re ready to pop in the oven.


Bake in oven (uncovered) at 180 degrees for 40 mins or until golden brown. Serve over rice with a garden salad. ENJOY!
