Today I decided to make a batch of mini fruit mince pies. I absolutely LOVE fruit mince pies and as soon as I see them out on the supermarket shelves – in like early August 😄- I always have to pop a box in my trolley.
As much as I love a good FMP they are super super SUPER sweet, and I do sometimes struggle to finish a whole one without getting a bit green around the gills / my teeth crumbling and falling out of my head.
So the idea behind today’s batch was to make a mini version of the traditional festive treat, where you could have a little mouthful of deliciousness without overdoing the sugar.
In the interests of efficiency (read: laziness/lack of skill) I made these using all store bought ingredients 😁 and they worked out a treat. They are delicious to eat, and wrapped up, would make a gorgeous handmade and edible Christmas gift.
Note: There are tonnes of good recipes for home made short crust pastry, as well as home made fruit mince, so if you do want to do a bit more from scratch you most definitely can. And if you do, I would love to hear how you go!
2 sheets of store bought shortcrust pastry
410g jar fruit mince
icing sugar, to dust
1 x 24 hole mini muffin tray
1 x 6cm round cutter
1 x mini star cutter (or shape of your choice)
Preheat oven to 200C and grease mini muffin tin.
Using a 6cm round cookie cutter, cut 24 pastry rounds.
Gently press the cut circles into the greases muffin tin.
Place 1 teaspoon of fruit mince in each pastry shell. Don’t be tempted to overfill or you will have sticky hot fruit mince everywhere.
Cut small stars (or whichever shape you like) into the remaining pastry.
Gently place the stars on top of the fruit mince.
Bake the mini pies in the preheated oven for 10-12 minutes or until golden brown on top.
Remove from oven and pop the pies out of the tray while they are still warm, otherwise the fruit mince will harden and stick to the tin making it really hard to pry out!
Allow to cool on a wire rack.
Serve with a dusting of icing sugar. ENJOY! 💜
