For anyone who loves a delicious brownie, you have to get on the ‘blondie’ bandwagon, if you haven’t already. These are delicious and moist, the same as any good brownie, but are made using white chocolate. I have mixed these with frozen berries and macadamia nuts which work so well together! The sweetness of the white chocolate is countered with the tartness of the berries and the macadamias give a gorgeous crunch and creamy texture.
These are not difficult to make and are absolutely delicious. The hardest part is having to wait til they completely cool before taking them out the pan but the wait is absolutely worth it – I made these yesterday and only have a few left today! 😁
75g frozen mixed berries
150g butter, roughly chopped
150g white chocolate chips
80g macadamia nuts, roughly chopped
1/2 cup raw sugar, plus 2 tsp for berry mixture
1 2/3 cups plain flour
1 tsp baking powder
1 tbsp water
Prep time: 30 minutes
Cook time: 20-25 minutes
Servings: 24 pieces
Preheat oven to 180C. Grease and line a 20cm x 30cm slice tin with baking paper. Set aside.
Pop mixed frozen berries, 2 tsp sugar and 1 tbsp water in a saucepan and heat until the sugar has dissolved.
Transfer the berry mixture into a blender and whizz up until a smooth puree. Set aside.
Place the butter and white chocolate into a heat proof bowl above (not touching) a saucepan of simmering water and stir until melted. Set aside to cool.
In a separate bowl, whisk eggs and sugar to combine.
Sift flour and baking powder into the egg and sugar mixture and mix to combine.
Add macadamia nuts and stir through.
Transfer to the pre-prepared slice pan. Drizzle the berry mixture over the top.
Use a skewer to combine the berry mixture into the slice mixture.
Bake in preheated oven for 20-25 minutes. The blondies are cooked when a skewer comes out with a few sticky crumbs.
Allow to cool completely in the pan before removing to slice.
Slice into squares and serve! YUM!
