Rocket, cherry tomato and bocconcini salad with basil

This salad ticks all the boxes – it looks nice, it is quick and easy to prepare and it is absolutely delicious! I had a version of this salad made by a friend a few weeks ago and I enjoyed it so much I set about making my own.

The salad only requires a handful of ingredients and takes about 10 minutes to throw together. With the bright red of the tomatoes contrasting with the green of the basil and rocket and the white of the bocconcini, this is also a really great option for Christmas. YUM! 😋


INGREDIENTS

For the salad:
60g baby rocket leaves
250g cherry tomatoes (I used the punnet with mixed colours – orange, red and purple)
100g cherry bocconcini, torn in half
1/2 cup basil leaves, roughly torn

For the dressing:
2 tbsp olive oil
1.5 tbsp balsamic vinegar
1 clove of garlic, minced
1 tsp sugar
salt and pepper to taste

Prep time: 10 minutes
Servings: Side salad for 6 people


HOW TO

For the dressing:

Put all the ingredients into a small jug and whisk to combine. Set aside.

For the salad:

Wash and dry rocket leaves and place on your serving plate.

Slice the cherry tomatoes and scatter over the top of the salad. The mixed colour tomatoes look great, but plain red cherry tomatoes can also be used.

Tear the mini bocconcini balls in half and scatter over the salad.

Tear the basil leaves and scatter over the top to finish.

Pour the dressing over the salad just as you are about to serve. ENJOY!
