I am always on the look out for quick and easy salads that are a bit different from your standard lettuce, tomato and cheese combination. Not that there is anything wrong with a simple garden salad, but when there are SO MANY different salad combinations to try it would be a shame not to mix things up a bit every now and again.
The first time I had this salad was actually at my mum’s house. My mum absolutely loves looking through recipe books and trying out new recipes. At the time I thought this salad was a bit out there, but when I tried it, I had to admit that everything about it just works. Especially in our hot Perth summers, the cool sweetness of the watermelon mixed with the saltiness of the feta and the freshness of the mint – win, win, win – it ticks all the boxes!
And if that sales pitch did not convince you that you need to give this salad a go, it only takes about 10 minutes to put one together. It would almost be rude not to try it, right?! 😄

75 grams of rocket leaves, washed and dried
300 grams watermelon, diced into bite size cubes
50 grams feta cheese, crumbled
1/4 red onion, sliced
2 tbsp fresh mint, roughly chopped
extra virgin olive oil and cracked pepper, to serve
Place the washed and dried rocket onto a serving plate.
Top with the diced watermelon, then the onion.
Crumble the feta over the top and then the chopped mint. Drizzle a small amount of extra virgin olive oil across the top and add some cracked pepper. Serve immediately. ENJOY! 💜
